Keto Waffles

Ingredients:

  • 6 Large Eggs

  • 2 Tablespoons Vanilla Extract

  • 4 Tablespoons Sugar (I use Splenda)

  • 1 Cup Whole Milk

  • 2 Teaspoons Baking Soda

  • 4 Cups Almond Flour


Instructions:

  1. Preheat your waffle maker. I use the "Dash mini waffle maker"

  2. Whisk together the eggs, vanilla, sugar, and milk

  3. Whisk in the baking soda and flour

  4. Pour 1/4 cup of mix on the waffle maker and cook until golden brown

  5. Serve with butter, peanut butter, and maple syrup (we use Cary's sugar free brand)


Note this recipe yields about 12 mini waffles. You can easily freeze leftovers and pop in the toaster to reheat.
