Overnight Oats

I am a big fan of oatmeal, and so is my oldest daughter. So when we learned that there is a "cold" oatmeal out there, we were intrigued. We played around with the recipe a tad and now are dreaming up all the ways we can doctor up our toppings- PB&J overnight oats being the most recent.


If you are hesitant, I get it! Cold oatmeal to me sounded a little bizarre at first. But the ease of making this recipe with my kiddos before bedtime and the wonderful texture and taste won me over. I truly think overnight oats is a great breakfast (or after school snack) option, especially on those busy mornings or during the warm summer months when dry cereal is getting boring and just isn't cutting it.


Ingredients:

  • 1/2 Cup Old Fashioned Rolled Oats

  • 1/2 Cup Milk (or milk alternative such as almond milk)

  • 1/4 Cup Yogurt (can be flavored or plain)

  • 1 Tablespoon Chia Seeds

  • 1 Tablespoon Sugar

  • 1 Tablespoon Honey

  • 1 Teaspoon Cinnamon

  • 1/2 Cup Toppings of your choosing- berries, bananas, nuts, maple syrup, peanut butter and jelly, Nutella, Caramel, chocolate chips, sprinkles, whipped cream, etc.


Directions:

  1. Mix all ingredients (except toppings) in a container that seals

  2. Seal the container

  3. Place in fridge overnight (or for at least 4 hours)

  4. Add your toppings and enjoy


Makes approximately 2 servings, depending on the amount of toppings you choose and how hungry you are. I double the recipe in several mason jars to have oats a few times during the week.


Overnight oats can be kept in your fridge for up to five days. Simply add a splash more milk before serving to achieve the desired consistency and creaminess.
