Need a meal to feed a crowd of hungry teens? Or need to switch up your Friday night pizza routine? This recipe is a good swap out, especially if you are gluten free. My fam loves it with a side salad and some breadsticks.
Ingredients
12 oz noodles (I use gluten free penne) cooked Al dente
24 oz spaghetti sauce (I use three cheese good & gather brand)
8 oz mozzarella cheese (one package)
6 oz pepperoni (one package).
24oz small curd cottage cheese
1 cup grated Parmesan cheese
Directions
Preheat oven to 375 degrees
Cook noodles until they are Al dente and drain
Spray a 9x13 glass dish with cooking spray
Pour 1/2 of the noodles into pan
Pour 1/2 of the cottage cheese and 1/2 the spaghetti sauce over the noodles
Layer 1/2 the bag of pepperoni over the sauce
Layer 1/2 the bag of mozzarella over the pepperoni
Sprinkle 1/2 cup of grated Parmesan over the top
Repeat a second layer of noodles, then cottage cheese, then sauce, then pepperoni, then mozzarella, and finally Parmesan
Cover with foil and bake in oven for 20 minutes
Remove foil and bake for an additional 10 minutes or until cheese is bubbly and melted
Serve with a side salad and breadsticks
