It's So Fluffy!


My family and I love the "Despicable Me" movie series. Its a beautiful story of redemption, adoption, hope, and above all else love.


In the first movie, the youngest daughter Agnes wins a fluffy unicorn at a carnival. She beams with joy when she receives it, stating her famous line in her deep belly voice "It's sooo fluffy"! It has become common grounds for my family to use this phrase any time they receive a fluffy gift- a new stuffed animal, blanket, socks, sweater, etc. But let me tell you about another oh so fluffy thing... introducing "Keto Fluff".


My husband and I are big Keto fans - you know the diet, or dare I say lifestyle, where you limit your net carb intake to put your body into fat burning mode called ketosis. The benefits can be transformational - promotes weight loss, reduces swelling, bloating, joint pain, acne, sugar cravings, increases mental clarity, gives you more energy, this list goes on. This is the "caveman way" our bodies were once use to living- so no doubt most bodies do well with this lifestyle. Even medical professionals recognize this lifestyle as a way to help people lose weight, manage blood sugars, and also minimize or reduce seizure's in patients with neurological disorders.


Keto Fluff is a creamy, yogurty, fruity way to help keep your carb count in line while also feeling like you are eating dessert! I have made this fluff countless times upon several requests from my family and friends. Its truly a staple in our home - whether it's for breakfast or snack time.



Ingredients:

-1 8oz Brick of Cream Cheese

-1/4 Cup of Splenda or other Sugar Substitute (this is optional)

-2 1oz Packages of any Sugar Free Jell-O or Pudding Mix

-2 Cups of Heavy Whipping Cream, or Almond Milk, or Coconut Milk

-1 8oz Container of Cool Whip

-1 32oz Container of Greek Yogurt (we use FAGE 5%)


Directions:

  1. Soften the cream cheese. It's okay to nuke it in the microwave for 30 second increments. Then beat the heck out of it until it is creamy.

  2. Beat in the Splenda.

  3. Add the Jell-O mixes and heavy whipping cream, beat until smooth. The mixture may get a tad "sticky" at this point.

  4. Fold in the Cool Whip.

  5. Fold in the Greek Yogurt.

  6. Put in a large container with lid (or many small single serve containers) and chill for 2hrs.

  7. Enjoy! Serve with berries, nuts, whipped topping, or sugar free chocolate chips on top.


With a Twist:

Consider mixing up the Jell-O flavors for a totally unique treat!

-In the Spring try vanilla + lemon Jell-O and top with blueberries.

-In the Summer try vanilla + orange Jell-O for a refreshing creamsicle experience.

-For dessert use the cheesecake Jell-O and serve with berries or sugar free preserves.

-For the fruit lovers try mixing raspberry + strawberry Jell-O, served with mixed berries.

-For the chocolate lovers try using chocolate fudge Jell-O topped with whipped topping and sugar free chocolate chips.

-For the kids use blue raspberry Jell-O and sprinkle with fruity pebbles for a tasty, fun, colorful breakfast.
