Cilantro Lime Rice


My family loves Chipotle - especially their cilantro lime rice. After several attempts, here is my copy cat recipee that is sure to please your next hungry mob - whether it be family dinner, hosting a pot luck, or an after church taco bar.


Ingredients:

  • 2 cups water

  • 2 cups instant white rice

  • 5 Tablespoons lime Juice

  • 3 Tablespoons cilantro

  • 1 Tablespoon salt


Directions:

  1. Bring two cups of water to a boil on the stovetop.

  2. Add rice, stir, and cook for three minutes.

  3. Cover your pan, turn off stovetop, and let rice sit for five minutes

  4. Add lime juice, cilantro, and salt to rice and stir until well mixed

  5. Serve as a side with tacos, enchiladas, or in your burrito bowl.


Store in sealed container in fridge for up to three days.
