Butter Me Up!


Waffles are a weeknight winner in our home! No really- waffles for dinner means no one complains about what we are eating or how many more bites need to be eaten in order to be dismissed from the kitchen table.


Waffles are also perfect for lent (for those taking part in meat free Fridays)! Just add in some yogurt, mixed berries, whipped cream, some oey gooey warm maple syrup, and you'll have your family begging for breakfast for dinner year round.


For my family, we make these gluten free. We typically double the batch so that we have plenty of left overs for Saturday's breakfast. (Pro tip- reheat the leftovers in the waffle iron to maintain that fresh golden delicious crunch)


Servings:

Makes about 5 seven-inch Belgian waffles.


Ingredients:

  • 2 Eggs

  • 2 Tablespoons Brown Sugar

  • 1 Tablespoon White Sugar

  • 1 Tablespoon Vanilla Extract

  • 1 3/4 Cups Milk

  • 1/2 Cup Vegetable Oil

  • 2 Cups of Gluten Free (or regular) Flour. I use "Bob's Red Mill Gluten Free 1-to-1 Baking Flour"

  • 4 Teaspoons Baking Powder

  • Optional Toppings: Butter, Maple Syrup, Fresh Berries, Chocolate Chips, Whipped Cream


Directions:

  1. Heat the waffle iron to high heat. I use a seven inch non stick iron.

  2. In a large bowl beat the eggs.

  3. Beat in all sugars and liquid ingredients.

  4. Add the flour and baking soda and gently mix (do not over beat).

  5. Add roughly 1/2 overflowing cup of the batter to the waffle iron.

  6. Heat until golden brown (about three minutes depending on your waffle iron and heat settings).

  7. Serve warm with toppings of your choice: butter, syrup, berries, chocolate chips, or whipped cream.


Don't forget the coffee (decaf if it's your weeknight)!!
